Now that winter is in effect here on the Oregon Coast (good morning 32 degrees), I've been using Mondays as a way to chase away the chill with soups. Not only does this recipe succeed in being delicious (make sure to add some minced garlic), it's also packed with iron and fiber. Those things are important right?
Be forewarned, this makes a very large pot and is extremely filling, so have giveaway or freezer ready dishes on hand.
